A satisfying summery soup (use 600g of fresh tomatoes when in season)

Recipe Ingredients for Tomato, apple and bacon soup

400 g tinned tomato
2 apples
1 small onion
1 clove garlic
500 g vegetable stock
1 tbsp fresh sage
1 tbsp olive oil
100 g bacon
100 g water

Recipe Directions for Tomato, apple and bacon soup

  1. Heat the oil in a saucepan and fry the chopped bacon until crisp.

  2. Reserve half the bacon and add the chopped onion and garlic to the pan, cook for 5-10 minutes until soft.

  3. Add the pealed and chopped apples, tomatoes and stock, simmer for 1 hour.

  4. Blend until smooth, reheat for 2 minutes then add the reserved crispy bacon and the sage (shredded finely).

  5. Serve.
