A spicy condiment for roasted or grilled vegetables or to accompany Grilled Blue Corn Polenta Cakes (recipe included here). This recipe is from Stephan Pyles' cookbook, Southwestern Vegetarian.

Recipe Ingredients for Tomatillo-Jalapeno Chutney

12 tomatillos, husked, rinsed, and chopped
2 small red bell peppers, seeded and diced
1 small green bell pepper, seeded and diced
8 scallions, thinly sliced
4 jalapeno peppers, seeded and minced
2/3 cup red wine vinegar
1/2 cup corn, fresh cut
1/4 cup brown sugar
1 tbsp cilantro, chopped
1 tsp salt
1 garlic clove, minced
1/4 tsp cayenne
1/4 tsp cumin, ground

Recipe Directions for Tomatillo-Jalapeno Chutney

  1. Put everything in a saucepan. Bring to a boil, stirring frequently.

  2. Reduce the heat and boil gently for 20 to 30 minutes, until thick, stirring occasionally. Let cool completely. Cover and refrigerate until ready to serve. Keeps for up to 2 weeks in the refrigerator.
