Tomatillo & Green Chile Stew (vegetarian)

Recipe Ingredients for Tomatillo & Green Chile Stew

9/10 pounds tomatillos
1 tablespoon ground coriander
2 tablespoons ground cumin
1 t cayenne pepper
260 grams white hominy
425 grams white beans
100 g anaheim chile
3 cloves garlic, minced
1 large onion, chopped
325 grams hatch chiles
1 chayote, chopped
3 cups vegetable broth
2 tablespoons canola oil
15 grams brown sugar, optional if tomatillos are too acidic

Recipe Directions for Tomatillo & Green Chile Stew

  1. roast, skin, seed, and dice chiles

  2. roast and then chop or puree tomatillos

  3. saute onions, chayote, garlic, spices in canola oil until onions are soft

  4. add chiles, tomatillos, hominy, beans, broth

  5. simmer

  6. season with pepper, salt, and sugar if necessary
