Recipe Ingredients for Tomatillo Chicken Enchilada Casserole

16 ounces chicken breast
2 chicken bouillon cubes
16 ounces tomatillos
1/2 onion
6 cloves garlic
2 jalapeno peppers, sliced
2 tablespoons fresh cilantro, chopped
1 cup fat free plain yogurt
7 corn tortillas, broken in to 4 pieces each
1 cup mozzarella cheese, shredded

Recipe Directions for Tomatillo Chicken Enchilada Casserole

  1. Bring 2 cups of water to boil, add bouillion cubes, 1/4 onion and 3 cloves garlic; when bouillion dissolved, add chicken and reduce to medium high heat; cover and cook until chicken is done, about 20-30 minutes for bone-in chicken breasts.

  2. Remove chicken from heat and shred when cool enough to handle, reserving broth.

  3. Remove husks from tomatillos and place in saucepan with jalapeno, 1/4 onion and 3 cloves garlic; add enough water to cover and bring to a boil; reduce heat and cover, cooking until tomatillos are dark "army green" color. Drain and place in blender, add cilantro and enough reserved chicken broth to cover + 1 inch more; Puree

  4. Stir together tomatillo sauce and shredded chicken.

  5. Spray 9x13 pan with non stick cooking spray and layer as follows: 3.5 corn tortillas, 1/2 chicken/tomatillo mixture, 1/2 cup yogurt then 1/2 cup mozarella cheese; Repeat.

  6. Cook in preheated 350 degree oven for 20 minutes or until edges start to bubble.
