Tortillas with black bean, veggies and green sauce

Recipe Ingredients for Tomatillo Black Bean Enchillada

1 cup flour
1 tablespoon sea salt
3/4 cup water
1/3 cup green pepper
16 ounces black beans
1 medium tomato, chopped
8 tomatillos, chopped
1/2 cup onion, chopped
2 garlic cloves, minced
1 serrano pepper, diced

Recipe Directions for Tomatillo Black Bean Enchillada

  1. Mix flour, water and salt. Roll out tortillas. Grill on stove each side for a few min.

  2. Heat green sauce (tomatillo, salt, garlic, onion) to a boil. Simmer for 10 min. Blend in blender.

  3. Load tortillas with beans, sauce and veggies. Bake at 350 for 10 min.
