Vietnamese Lemongrass and Coconut Milk Soup

Recipe Ingredients for Tom Kha

2 cups napa cabbage
2 cups green bell pepper
4 cups mushrooms
1 cup lime juice
6 cups chicken stock
3 cups water
14 ounces light coconut milk
1/2 cup cilantro
3 tablespoons fish sauce
14 slices ginger root
8 tablespoons finely chopped lemongrass
2 tablespoons sugar
5 cups cooked brown rice

Recipe Directions for Tom Kha

  1. Boil chicken stock, water, lemongrass, and ginger.

  2. Add cabbage, bell pepper, mushrooms, fish sauce and sugar.

  3. Simmer for 15-20 mins.

  4. Add lime juice, coconut milk, and cilantro.

  5. Season to taste.

  6. Serve in a bowl over rice.
