A delicious, flavorful and filling chicken and coconut milk thai soup.

Recipe Ingredients for Tom Kha Kai

16 ounces chicken broth
5 ounces lite coconut milk
2 tsp chili paste
1 tbsp lemon grass
1 tbsp galanga root
1 tbsp thai fish sauce
1 tbsp lime juice
1 tbsp brown sugar
3 oz chicken breast
1/2 cup sliced mushrooms
1/3 cup sliced onion
1/4 cup cilantro, chopped

Recipe Directions for Tom Kha Kai

  1. Put chicken broth, coconut milk, chili paste, bruised (to release flavor) lemon grass, galanga root, fist sauce, lime juice and brown sugar into a pot, bring to a boil and reduce heat to a simmer.

  2. Add chicken, mushrooms and onion and simmer for 10-15 minutes.

  3. Serve with cilantro as a garnish if you choose.
