Abbreviated version of one of my favorites. Great for if you're sick! For more authenticity you can add kafir lime leaves if available. Also tofu or shrimp can be switched for the chicken.

Recipe Ingredients for Tom Kha Gai Soup

32 fluid ounces chicken stock
1 tsp. (12 inches) fresh lemongrass, tough skin removed and bruised to release flavor
11 g. ginger, thinly sliced
4 tablespoons fish sauce
2 tablespoons lime juice
12 1/2 oz chicken breast (canned), shredded
5 fluid ounces coconut milk
1 serrano chile peppers, sliced
2 tbsp. agave syrup or honey
1/4 cup coriander (cilantro)

Recipe Directions for Tom Kha Gai Soup

Bring lemongrass, ginger, fish sauce, and lime juice to boil in the chicken stock. Add coconut milk, chicken, and chilis, cook for 5 minutes or until warmed through. Add agave syrup or honey to taste and garnish with whole cilantro leaves.
