Thai Chicken Coconut soup (tofu substituted for chicken) If using chicken, use 1 lb. skinned breast or thigh, cut into 1-inch chunks.

Recipe Ingredients for Tom Kha Gai

1 tbsp Coconut Milk
2 cup (8 fl oz) Soup, Chicken Broth Or Bouillon
5 5 slices (1" dia) Ginger Root
2.363 oz Lemon Grass (Citronella)
4.445 oz Tofu, Firm
1 serving Mushrooms Fresh
2 oz Lime Juice
1 tbsp Fish Sauce
1 serving Sugar Pure Cane
1 tbsp Spicy Thai Chili Sauce
1/4 cup leaves, whole Basil, Fresh
1/4 cup Coriander Leaves

Recipe Directions for Tom Kha Gai

In a medium saucepan, compbine coconut milk, broth, ginger and lemongrass and bring to a boil over high heat. Add tofue, mushrooms, lime juice, fish sauce sugar and chili paste. Reduce heat and simmer for 5-10 minutes. Discard lemon grass. Garnish with basil and cilantro. Marinate the tofu (cut into cubes) overnight in a mixture of fish sauce , lime juice and chili paste (2 tbsp of each)
