I make this soup a lot without the chicken and it's still a filling and satisfying soup! You can also use sliced fresh mushrooms instead of the canned, sauteeing them with the chicken; chicken buillion for chicken base; and ground ginger for fresh (but use less!). You can adjust the amounts of spices to your own tastes, too, adding more or less citrus, heat, and fish sauce. I've also used anchovy paste or finely minced anchovy fillets instead of fish sauce when I was out. Add other veggies like thin sliced carrots, celery, bell peppers, onion, snow peas, broccoli, cauliflower, or whatever you like to incease nutrient content!

Recipe Ingredients for Tom Ka Gai (Thai Coconut Milk Chicken Soup)

14 oz Lite Coconut Milk
2 cup Broth Chicken Flavored
6 tsp Ginger Root - finely minced or grated
1 cup pieces Mushrooms
0.13 cup chopped raw Lemongrass - about 2 Tablespoons finely minced
1 fl oz Lime Juice, Canned Or Bottled, Unsweetened
3 tsp Chicken Base
2 oz Fish Sauce
3 teaspoon Red Curry Paste

Recipe Directions for Tom Ka Gai (Thai Coconut Milk Chicken Soup)

  1. Cut chicken into very thin-sliced, bite size pieces.

  2. Sautee chicken in hot 2qt saucepot sprayed with cooking spray until browned.

  3. Add chopped lemongrass, grated ginger, chicken base, and curry paste.

  4. Add the lime juice and fish sauce to deglaze the pan, then slowly stir in chicken broth, mushrooms, and coconut milk, stirring well to completely mix in the spices.

  5. Heat to boiling and then simmer for a few minutes to blend the flavors.
