Recipe Ingredients for tofurky


For the tofurkey:
70 ounce extra-firm tofu, drained
2 tablespoons miso
2 teaspoons finely chopped fresh thyme leaves
1 1/2 teaspoons freshly ground black pepper
1 1/2 teaspoons lite soy sauce
1 teaspoon finely chopped fresh sage leaves

For the glaze:
3 tablespoons freshly squeezed orange juice (from about 1/2 medium orange)
2 tablespoons lite soy sauce
1 tablespoon olive oil
1 teaspoon miso
1 teaspoon Dijon mustard

For the stuffing:
2 tablespoons olive oil
3 medium green onions, small dice
2 celery stalks, small dice
1 1/2 teaspoons finely chopped fresh thyme leaves
3/4 teaspoon finely chopped fresh sage leaves
1 Kosher salt
1 Freshly ground black pepper
12 ounces cremini mushrooms, stems trimmed, halved if large, and sliced 1/4-inch thick
3/4 cup success brown rice
1 cup low sodium chicken broth
1/2 cup water
1 tablespoon finely chopped fresh Italian parsley
1 teaspoon red wine vinegar
