Vegan/Vegetarian recipe for a "tuna" sandwich

Recipe Ingredients for Tofuna Sandwich

1 celery stalk, large, finely chopped
1 scallion (white and light green part), finely chopped (optional)
1/3 cup mayonnaise (tofu or vegannaise)
8 oz. tofu, pkg. baked marinated
1 pita bread, warmed and cut crosswise in half

Recipe Directions for Tofuna Sandwich

  1. In medium bowl, crumble tofu. Add mayonnaise, celery and scallion if using and stir until well combined.

  2. Stuff mixture into warmed pita bread halves and serve.
