Vegetarian burgers made with bulgur (cracked wheat) and tofu.

Recipe Ingredients for Tofuburgers

160 g (1 cup) bulgur
2 cups water
3/4 tsp salt
1 lb extra-firm tofu
116 g eggs (2 extra large)
2 cups whole-wheat flour
1 medium onion
1 1/2 tsp basil
1/2 tsp oregano
3/4 tsp garlic powder
1/8 tsp pepper
2 tbsp grated parmesan cheese

Recipe Directions for Tofuburgers

  1. Bring salted water to a boil

  2. Add bulgur

  3. Simmer uncovered for 10 minutes or until all water is absorbed

  4. Meanwhile, mash tofu with eggs in a large bowl

  5. Add remaining ingredients except bulgur and flour and mix well

  6. Mix coked bulgur with tofu mixture and stir until cool enough to handle

  7. Add enough flour (1 1/2-2 1/2 cups) to form patties (they'll be a little sticky)

  8. Form patties about 3 inches in diameter and 1/2-3/4 inch thick (it helps if you form them by taking a small handful of dough and tossing lightly back and forth between the palms of your hands)

  9. Fry in hot oil for 2-3 minutes on each side

  10. Drain off excess oil and serve as desired

  11. Makes 20-24 burgers (nutritional information is for 20 burgers)

  12. Alternately, the dough can be fried in small balls and used as a substitute for meatballs
