Baked tofu with roasted veggies (tomato, potato, onion, asparagus)

Recipe Ingredients for Tofu with veggies

1 cup, sliced Onions
1/2 cup, chopped Carrots
1/2 medium Tomatoes
1 potato medium (2-1/4" to 3-1/4" dia) Potatoes, White, Flesh And Skin, Baked
1 medium (2" dia, 5" long, raw) Sweetpotato
16 spears (1/2" base) Asparagus
1/2 teaspoon Gourmet Collection Garlic Salt
1 dash Pepper, Black
1/4 tsp, ground Basil, Dried
1/4 tsp Coriander Leaf, Dried
14 oz Organic Tofu, Firm
0.53 oz Extra Virgin Olive Oil

Recipe Directions for Tofu with veggies

Drain tofu, place in baking dish with chopped veggies. Toss with olive oil and spices. Bake 1 hour at 350.
