Tofu veggie stirfry with brown rice

Recipe Ingredients for Tofu veggie stirfry with brown rice

3/4 c brown rice
1/2 c carrot
1/2 c celery
1/2 c kale
1/2 c onion
1/2 c collard greens
1/2 c zucchini
1/6 c tofu
1 tbsp olive oil
2 tsp garlic
2 tsp ginger

Recipe Directions for Tofu veggie stirfry with brown rice

  1. Begin cooking rice

  2. Cut veggies to bite-size pieces

  3. Stirfry with olive oil for 40 minutes while rice is cooking

  4. When rice is finished cooking, add to stirfry and mix

  5. Season to taste
