Delicious (even by the standards of my meat-eating husband) tofu, spinach, artichoke, mushroom lasagna. Use fresh cheeses (not the grated parm from a can) for best results. This recipe replaces the ricotta cheese with tofu - less fat and a good lean protein.

Recipe Ingredients for Tofu Veggie Lasagna

1 tbsp Olive Oil
2 cloves garlic
12 oz artichoke hearts, roughly chopped
8 oz baby bella mushrooms, sliced
12 oz firm tofu, crumbled
12 oz frozen spinach, thawed & drained
4 oz Parmesan cheese
4 oz part skim Mozzarella cheese
1 oz Asiago cheese
12 oz marinara sauce
5 oz whole wheat lasagna noodles

Recipe Directions for Tofu Veggie Lasagna

  1. Preheat oven to 400 degrees and spray an 8" x 8" glass baking dish with cooking spray.

  2. Saute garlic, artichokes, and mushrooms in the olive oil for about 5 minutes.

  3. Combine the saute (once slightly cooled) with the tofu crumbles, thawed spinach, Parmesan, Mozzarella, Asiago, and Italian seasoning leaving some cheese to sprinkle on top.

  4. Put a layer of pasta sauce in your baking dish (1/4 of jar).

  5. Add a layer of no-cook whole wheat lasagna noodles.

  6. Spread 1/3 of the cheese, tofu, veggie mix on top of the noodles.

  7. Layer sauce, noodles, mixture, sauce, noodles, mixture and sauce.

  8. Sprinkle remaining cheese on top.

  9. Bake for 45 minutes with foil over the top. Remove foil and bake for an additional 10 minutes or until the cheese slightly browns around the edges.
