Recipe Ingredients for Tofu Tomato Soup

1 cup, sliced Onions
5 medium Carrots, Baby
10 oz Mild Diced Tomatoes and Green Chilies
14.5 oz peeled tomatoes in juice, diced, no salt added (kroger)
1 tsp Garlic
8 oz Silken Tofu

Recipe Directions for Tofu Tomato Soup

  1. chop onion and carrots.

  2. spray dutch oven with olive oil spray and preheat on medium heat.

  3. saute onion, carrots, and garlic for about 5 minutes, adding about 1 tbs. water at a time as needed to keep veggies from scorching.

  4. add the tomato paste, cook 1 minute, stirring constantly.

  5. add both cans of tomatoes and equal parts water, bring to a boil, then cover and simmer on low heat for 15 minutes.

  6. add the Tofu and simmer uncovered for 15 minutes or until veggies are tender.

  7. blend small amounts at a time in a blender until smooth.

  8. serve with Parmesan toast.
