Recipe Ingredients for Tofu Sweet Potato Curry

360 g sweet potatoes
1 pound tofu
20 oz stewed tomatoes
2 tsp curry
5 oz arugula

Recipe Directions for Tofu Sweet Potato Curry

  1. Bake or microwave potatoes in their skins until done but still firm. Cool, then peel and cut into a large dice.

  2. Combine the tofu (cubed), tomatoes (roughly chopped), and 1 tsp of curry powder into a large skillet. Bring to a simmer, cover, and cook over medium low heat for 10 minutes.

  3. Add the diced sweet potato and cook for another 5 minutes.

  4. Add the arugula, cover, and cook very briefly, just until arugula wilts slightly. Season with more curry and salt if desired.
