From a wonderful cookbook--Lean and Luscious and Meatless by Bobbie Hinman and Millie Snyder. I decreased the serving size from 6 to 4. To get calorie count correct using products I had on hand, there are notes indicating calorie totals for bamboo shoots and such. It may not equal two cans, etc. Read label on your products.

Recipe Ingredients for Tofu Sukiyaki


Sauce:
1/3 c soy sauce, reduced-sodium
1/2 c vegetable broth
60 g (1/4 c) sherry
2 t sugar
1 clove garlic, minced
1 t fresh ginger, grated
1/4 t pepper

Vegetables:
5 block (16 oz) firm tofu, cut into matchstick-size pieces, drained will on towels
2 c sliced onions
1 c celery, sliced 1/4-inch thick
2 cans bamboo shoots, drained (total 90 calories)
9 oz water chestnuts, sliced and drained (total 80 calories)
1 c sliced mushrooms
2 c mung bean sprouts
1 c green onions, thinly sliced, green and white parts
4 c fresh spinach, torn into large pieces, stem and center vein removed

Recipe Directions for Tofu Sukiyaki

  1. Combine all sauce ingredients in a small bowl and mix well.

  2. Preheat a large nonstick skillet or wok over medium-high heat. Add tofu, onions, celery, and 1/2 c sauce. Cook, stirring with a tossing motion, 10 minutes, until onions and celery are tender.

  3. Add bamboo shoots, water chestnuts, and mushrooms. Cook, stirring, 3 minutes.

  4. Add remaining sauce, bean sprouts, green onions, and spinach. Cook, stirring, 3 minutes, or until spinach is wilted and thoroughly mixed into vegetables.

  5. Serve over cooked brown rice or whole wheat ribbons.
