2 tbsp. extra virgin olive oil
1/2 cup shredded carrots
6 oz. water chestnuts
1 small green pepper
1 lb. tofu
1 cup bok choy
1 cup portabella mushrooms
2 tbsp. soy sauce
1 salt
1 pepper
2 cups rice
