Recipe Ingredients for tofu stir fry

2 medium potatoes
1 c vegetable broth
1/2 yellow onion
1 1/2 c japanese eggplant
2 c crimini mushrooms
1/4 c olive oil
1/2 c carrots
1/2 cup broccoli
1/2 cup cauliflower
1/2 cup snap peas
2 c firm tofu
1/8 c cilantro
3 roma tomatoes
1 tsp chili oil
1 tbs soy sauce

Recipe Directions for tofu stir fry

Fry tofu and potatoes separately to get texture right, but otherwise just throw everything together in the wok and let it go.
