good stir fry. I substitute lettuce for rice but you could put it over rice instead.

Recipe Ingredients for tofu stir fry over lettuce

91 g lite extra firm tofu
2 cups lettuce
1/4 cup onion
1 cup mushrooms
1 cup frozen broccoli
18 g stir fry sauce
1/2 cup carrots
1/2 cup cauliflower

Recipe Directions for tofu stir fry over lettuce

  1. chop everything up and cube the tofu (I use frozen veggies if I don't want to spend time chopping them us or if I want more variety of vegetables the frozen veggie mixes are great)

  2. put everything except the lettuce and stir fry sauce into an egg skillet and cook it on medium to medium low heat. (if you are not using frozen veggies make sure to put in a bit of water in the bottom of the skillet so the food doesnt burn and stick to the skillet, or you could just put in the stir fry sauce early)

  3. When it looks done and is hot put in the stirfy sauce and serve it all over the shredded lettuce.
