Recipe Ingredients for Tofu Spread

8 ounces extra-firm tofu , pressed
2 tbsp. lemon juice
1 tbsp. parsley
1 1/2 tsp. Dijon mustard
1/2 tsp. garlic powder
1/4 cup light olive oil
1 salt and freshly ground black pepper
4 tomatoes
16 cucumber slices
1/2 cup red onions
1/4 cup rosemary, roughly chopped

Recipe Directions for Tofu Spread

  1. Press tofu for 1 hour on a plate with paper towels and something heavy on top to drain excess moisture.

  2. Cut the tofu into small chunks. Place into a food processor and add the lemon juice, parsley, mustard and garlic powder and pulse until blended.

  3. With the food processor running, slowly drizzle the oil through the feed tube for about 2 minutes. Season to taste with salt and pepper.

  4. Spread about 1 tablespoon of tofu spread on toast. Top with the tomato and cucumber slices and season to taste with salt and pepper. Top with pickled onions and fresh herbs.
