Recipe Ingredients for Tofu Spinach Lasagna

355 g whole wheat lasagna noodles
560 g spinach
450 g firm tofu
13 g sugar
60 ml organic soy milk
2 cloves garlic
30 ml lemon juice
5 g minced fresh basil
6 g salt
4 cups Classico Traditional Favorites Pasta Sauce Tomato and Basil

Recipe Directions for Tofu Spinach Lasagna

  1. Preheat oven 350f (180c, or gas mark 4)

  2. Cook 1/2-1 pound lasagna noodles according to package, drain, set aside.

  3. blanch spinach (or squeeze as much water from frozen as possible), set aside

  4. Place tofu, sugar (if using), milk, garlic cloves ( or 1/2 teaspoon garlic powder), lemon, basil, and salt in a blender or food processor, and blend until smooth. The tofu "ricotta' should be creamy, but still have body.

  5. Transfer to large bowl, and stir in spinach.

  6. Cover 9x13 inch lasagna dish with thin layer of pasta sauce, then noodles, then 1/2 of the total amount of ricotta, then 1/2 sauce, and so on finishing with the remaining pasta sauce.

  7. Bake 40-45 minutes until hot and bubbling.

  8. Yield 8-10 servings
