A yummy healthful dip or spead made with soft tofu and spinach. I served with carrot and pita, but definately wished I had some feta and peppers.

Recipe Ingredients for Tofu Spinach Dip

2 slices soft silken tofu (~6oz)
1/2 cup frozen spinach, thawed and drained
2 tsp chopped onion flakes
2 tsp onion powder
2 tsp cumin
1 tsp paprika
2 cloves garlic
1 tbsp light mayo
1 tsp seasoning salt
1/2 tsp cayenne

Recipe Directions for Tofu Spinach Dip

  1. Blend drained spinach and tofu in food processor.

  2. Add others ingredients until well blended and chill.
