From Family Vegetarian Cooking (Good Housekeeping), p. 129. Recipe is edited to reflect extra vegetables (broccoli), amounts of tofu and Asian-style vegetables. Serve over brown or white rice.

Recipe Ingredients for Tofu in Spicy Brown Sauce

28 ounces (2 packages) extra-firm tofu, drained
1 c vegetable broth
1/3 c soy sauce
1 T brown sugar
1 T cornstarch
2 T seasoned rice vinegar
1/8 t crushed red pepper
1/2 c water
14 ounces (1 package) frozen Asian-style vegetables
4 c broccoli florets
1 T vegetable oil
3 garlic cloves, crushed with garlic press
3 green onions, sliced

Recipe Directions for Tofu in Spicy Brown Sauce

  1. Drain. press. and dry tofu. Cut tofu into 1/2-inch pieces. Set aside.

  2. Whisk broth, soy sauce, brown sugar, cornstarch, vinegar, crushed red pepper, and water. Dissolve.

  3. In skillet, saute garlic and ginger in oil. Add broth mixture. Boil 1 minute. Stir in tofu and cook until heated through.

  4. Add vegetables and broccoli until heated through. Sprinkle with green onions before serving.

  5. Serve with rice, if desired.
