Recipe Ingredients for Tofu Spaghetti Sauce

1 cup(126 g) Tofu, Firm
1 cup, pieces or slices Mushrooms
6 medium (4-1/8" long) Onions, Spring Or Scallions
4 clove Garlic
1 cup, chopped Peppers, Sweet, Green
3 medium whole (2-3/5" dia) Tomatoes, Red, Ripe
1/2 medium Carrots
2 tbsp Tomato Paste
1 1/2 tbsp Italiano
1 tbsp Olive Oil

Recipe Directions for Tofu Spaghetti Sauce

  1. Dry saute the tofu and 1 tsp of Italian spice until it crumbles, drain and put aside

  2. Saute the onions and green peppers until soft

  3. Add the green peppers and continue to saute on low heat

  4. Add the mushrooms continue to cook

  5. Dice three of the tomatoes and add to the pot

  6. Place cut up carrot and remaining tomato in blender with tomato paste and a little water

  7. Blend until smooth

  8. Add this mixture to the sauce

  9. Add spices and about 2 cups of water..

  10. Continue to cook on low until it reduces the water.
