Recipe Ingredients for Tofu Scramble

1 lb firm tofu
1 c sliced mushrooms
2 cups collard greens
100 g summer squash
1/4 onion
3 cloves garlic
1 tablespoon olive oil

Recipe Directions for Tofu Scramble

Cook the onions and garlic in the oil briefly, until browning. Add desired spices like cumin, sage, thyme, rosemary, etc (but not all at once!); alternately try a garlic-sesame with soy sauce. Add crumbled tofu and cook about 10 minutes until browned, slightly crisped in areas, and not watery. Add pre-cooked vegetables, cook another 5 minutes or so. Enjoy with home fries, toast, or just as it is.
