Made this up one morning, as I really like Tofu

Recipe Ingredients for Tofu Scramble

4 oz firm Tofu
1 large egg
2 large egg whites
1 tsp extra virgin olive oil
1/4 tsp ground cumin
1/4 tsp Chili Powder
1/4 tsp turmeric
1/4 tsp oregano
1/2 jalapeno pepper
1/4 cup onion, diced
30 gram crimini mushrooms
1 green onion
1/2 tomato
1/4 green pepper

Recipe Directions for Tofu Scramble

  1. Drain tofu, dice into 1"-inch pieces.

  2. Combine olive oil with all seasonings in a small bowl.

  3. Add diced tofu and toss to coat well.

  4. Combine egg and egg whites in a separate bowl. Beat well.

  5. Heat a small frying pan. Add the tossed tofu and stir-fry, reserving the small bowl.

  6. Add all of the diced vegetables to the bowl the tofu was in, so that you get any of the remaining drippings to coat the vegetables.

  7. Add the vegetable mixture to the tofu and stir-fry for a few minutes.

  8. Add the beaten egg mixture, and stir until eggs are completely cooked.

  9. Serve immediately. I usually serve it on Corn tortillas, but did not add them to the recipe as this is a personal choice.
