Recipe Ingredients for Tofu Scramble

1 tbsp olive oil
1 cup onion, chopped
1 tsp garlic, minced
2 cups portabella mushrooms, sliced
2 bell peppers, diced
2 tomatoes, chopped
24 oz firm tofu, drained and pressed
1 tsp turmeric
1 1/2 tsp cumin
3/4 tsp paprika
3 tbsp nutritional yeast

Recipe Directions for Tofu Scramble

  1. Heat oil in large skillet. Add onion and garlic. Saute for 2 minutes.

  2. Add mushrooms and bell peppers; saute until peppers are tender.

  3. Crumble tofu in pan. Stir well to mix. Add seasonings and nutritional yeast. Saute 5-8 minutes, stirring occasionally, until tofu is bright yellow and heated through.

  4. Season with salt and pepper to taste.
