Tofu Scramble Recipe

A delicious option to scrambled eggs or omelete in the morning.

Recipe Ingredients for Tofu Scramble

16 oz silken tofu
2 oz onion, diced
2 oz mushrooms, sliced
2 oz squash, diced
2 oz tomato, diced
2 tsp turmeric
1/2 tsp cayenne
1 tsp garam masala
1 tbsp safflower oil
1/2 tsp salt
1/2 tsp pepper

Recipe Directions for Tofu Scramble

  1. Drain tofu. Heat up skillet, add 1/2 tbsp of oil. Add tofu, cayenne, garam masala and turmeric. Saute until tofu starts to dry out.

  2. Heat up a second skillet and add the rest of the oil. Add all the veggies and saute until tender.

  3. Mix tofu and veggies together, add salt and pepper to taste.

  4. Enjoy!
