Vegetarian tofu dish. Great filling for wraps also!

Recipe Ingredients for Tofu Scramble

1 tsp olive oil
14 oz. firm tofu
1 zucchini
3/4 cup corn
1/2 cup green onions
1/2 cup reduced fat Monterey Jack cheese
1/2 cup salsa
1/2 tsp salt
1 tsp cumin
1 1/2 tsp chili powder

Recipe Directions for Tofu Scramble

Saute crumbled tofu with seasoning until browned. Remove. Saute vegetables until tender. Add tofu, cook for another 2-3 minutes. Remove from heat and stir in cheese. Top with salsa.
