Adapted from allrecipes.com. A great replacement for egg salad or chicken salad.

Recipe Ingredients for Tofu Sandwich Spread

1 package Tofu
3 medium (4-1/8" long) Onions, Spring Or Scallions
1 stalk, large (11"-12" long) Celery
115 grams Light Dressing
2 tbsp Soy Sauce
1 tbsp Lemon Juice, Canned Or Bottled
0.5 tsp Pepper, Black

Recipe Directions for Tofu Sandwich Spread

  1. Drain tofu and cut into quarters, then freeze overnight. Freezing changes the consistency of the tofu and makes sure the end result isn't soggy, but if you don't have time, make sure to squeeze out as much water as possible, such as by pressing between heavy plates.

  2. Thaw tofu and squeeze out as much water as possible, first by hand and then with paper towels.

  3. Combine all ingredients and stir until well combined.
