marinated carribean tofu with pineapple salsa

Recipe Ingredients for tofu w salsa

14 oz tofu
1/2 cup orange juice
2 tbs lime juice
3 tbs soy sauce
2 tbs brown sugar
1/2 tsp allspice
1 tsp garlic powder
2 tsp ginger, grated
1 tsp black pepper
1/4 tsp cayenne pepper
1/4 tsp cinnamon
1/2 tsp thyme
1 cup pineapple, diced
2 roma tomatoes, diced
1/4 cup cilantro, chopped
2 tbs chives, chopped
1 tsp garlic, minced
1/2 tsp salt

Recipe Directions for tofu w salsa

  1. slice tofu

  2. marinate in next 11 ingredients for 1 hour

  3. bake at 375 for 15 minutes on each side, then broil to get it nice and toasty

  4. prepare salsa with remaining 6 ingredients and serve over the tofu
