Recipe Ingredients for Tofu with Roasted Peppers and Tomatilla

2 serrano peppers
2 tbsp vegetable oil
2 lbs tofu
1 large onion, chopped
1 1/2 lb tomatillos, husked and rinsed
1 cup cilantro
1 cup chicken or vegetable broth
3 tbsp heavy cream

Recipe Directions for Tofu with Roasted Peppers and Tomatilla

  1. roast peppers, peal and skin

  2. brown tofu in oil, remove

  3. saute onion in oil until golden brown

  4. blend tomatilla and cilantro, pour into onion mixture and cook 8-10 minutes until thick

  5. add broth and heavy cream and tofu, simmer covered for 8-10 minutes
