This recipe uses oven ready lasagna noodles

Recipe Ingredients for Tofu & ricotta lasagna

1 lb. firm tofu, drained & mashed
8 oz. lasagna noodles
3 cups tomato sauce
15 oz. ricotta
1 egg
1/2 tsp. basil
1/2 tsp. oregano
8 oz. mozzarella
1/2 cup parmesan

Recipe Directions for Tofu & ricotta lasagna

  1. Heat oven to 350.

  2. Drain and mash tofu, stir into sauce (30 oz. jar)

  3. Stir together ricotta, egg (slightly beaten), 1/4 cup of parmesan, basil and oregano.

  4. Assemble mixture and noodles as described on the package, substituting meat sauce with the tofu sauce.

  5. Sprinkle with remaining (1/4 cup) parmesan.

  6. Cover with foil, bake 30 min.

  7. Remove foil, bake 10-15 min. until hot and bubbly.

  8. Let stand at least 5 minutes before cutting.

  9. Makes 10 servings.
