Recipe Ingredients for tofu rice scramble

5 cups cooked brown rice
1 block extra firm tofu
1/2 cup carrots
2/5 cups cooked spinach
5 scallions
5 cloves garlic
1 1/2 tbsp canola oil
4 tbsp low sodium soy sauce

Recipe Directions for tofu rice scramble

Fry tofu in a skillet with oil, throw in veggies at the last minute (except for scallions), squirt in some soy sauce, combine with rice, top with scallions.
