Recipe Ingredients for Tofu

1 block firm tofu, drained
1/3 cup low-fat mayonnaise (or low-fat yogurt)
1/3 cup sweet relish
1/2 tsp. lemon juice (or rice vinegar)
1/2 stalk celery, diced
1/2 tsp. garlic powder
1/2 tsp. onion powder
1 tablespoon mustard
1 dash paprika for garnish (optional)

Recipe Directions for Tofu

  1. Mash tofu with a fork in a medium bowl. Add rest of ingredients and stir together until well combined.

  2. Great on a sandwich (add tomatoes and lettuce or sprouts) or on crackers.

  3. Better the second day after flavors mesh.
