As a vegetarian, I need a good source of protein in my diet. Sometimes, I just have to add it to dishes conventionally not even served with meat to make sure I maintain bodyweight.

Recipe Ingredients for Tofu Ratatouille

1 onion
3 cloves garlic
1 large eggplant
28 oz crushed tomatoes
2 medium zucchini
7 mushrooms
2 tbs olive oil
1/2 cup tofu

Recipe Directions for Tofu Ratatouille

  1. Sauté the onion and garlic until tender

  2. Add eggplant and tomatoes, bring to simmer

  3. Simmer, covered for 15 minutes

  4. Add zucchini

  5. Simmer for 10-15 more minutes until vegetables are suitably soft

  6. Remove from heat

  7. Stir in the herbs, season to taste
