Recipe Ingredients for Tofu Rancheros

16 oz firm tofu
3 tbsp cornmeal
2 1/2 tbsp olive oil
1 Salt
1 medium onion, quartered and thinly sliced
1 medium green bell pepper, cut into short, narrow strips
1 hot green pepper, minced, seeds removed
16 oz salsa
1 cup canned crushed tomatoes
8 corn tortillas
1 1/2 cups soy Cheddar cheese, grated

Recipe Directions for Tofu Rancheros

  1. Cut the tofu in 6 slabs crosswise. (Blot to dry if wet.) Then dice the tofu into small pieces.

  2. Combine the tofu and cornmeal in a plastic food storage bag. Shake gently until the tofu is evenly coated.

  3. Heat 1.5 TBSP of the oil in a large wok or skillet.

  4. Add the tofu and saute over medium-high heat, stirring frequently, until golden on most sides (takes about 8-10 minutes). Sprinkle with salt. Transfer to dish and cover to keep warm.

  5. Heat the remaining TBSP oil in same skillet. Add the onion and saute over medium heat until translucent.

  6. Add the bell pepper and chile, and continue to saute until the onion and peppers are lightly browned.

  7. Stir the salsa and tomatoes into the skillet and cook just until heated through (1-2 minutes longer).

  8. To assemble, place 2 tortillas on each plate. Divide the salsa and onion mixture among the tortillas, then sprinkle evenly with tofu. Sprinkle cheese over the tops.
