Tofu Quiche Recipe

Tofu spinach quiche w/ brown rice crust. Vegan and delicious!

Recipe Ingredients for Tofu Quiche

1 medium onion, finely chopped
2 cloves minced garlic
1 lb. spinach, cooked to just done
1 lb firm tofu, drained
1/2 cup soy milk, unsweetened
2 tbsp nutritional yeast
1/4 teaspoon Dijon mustard
3/4 teaspoon salt
1/2 teaspoon ground red pepper
2 cups brown rice, cooked
3 tbsp olive oil
2 cups crimini mushrooms, chopped

Recipe Directions for Tofu Quiche

  1. Shell: Combine 2 TBSP olive oil with brown rice, 1 TBSP chopped onion, and spices of choice in a bowl. Press into a greased pie pan and bake at 425 until firm. Remove.

  2. Cook onion and garlic, mushrooms, until golden and add spinach. Heat through. In blender, puree tofu, soymilk, mustard, salt, nutmeg, pepper, and yest, until smooth. Pour into large bowl and add the onion and veggie mixture. Combine well. Pour into pre-cooked pie shell, and bake at 400 degrees for 35-40 minutes or until quiche is set. Allow to sit for 5 minutes before cutting.
