Recipe Ingredients for Tofu with Peanut-Ginger Sauce

5 tbls Water
4 tbls Peanut Butter, natural
1 tbls Vinegar, Rice
2 tsp Soy Sauce, reduced-sodium
2 tsp Honey
2 tsp Ginger, minced
2 cloves Garlic
14 oz Tofu, Extra-Firm
2 tsp Extra Virgin Olive Oil
4 cups Spinach, Baby
1 1/2 cups Mushrooms
4 Green Onion

Recipe Directions for Tofu with Peanut-Ginger Sauce

  1. Wisk water, peanut butter, rice vinegar, soy sauce, honey, ginger and garlic in a small bowl.

  2. Drain and rinse tofu, pat dry. Slice the block crosswise into 1/2" thick slabs. Coarsely crumble in smaller pieces.

  3. Heat oil over high heat. Add tofu and cook until golden brown on all sides. 10-12 minutes.

  4. Add spinach, mushrooms, green onion, and peanut sauce and cook until the veges are just cooked. 1-2 minutes more.
