I love this recipe! It could probably use more ginger though.

Recipe Ingredients for Tofu with Peanut-Ginger Sauce

5 tablespoons water
4 tablespoons peanut butter
1 tablespoon rice vinegar
2 teaspoons honey
2 teaspoons minced ginger
2 cloves garlic, minced
14 oz. tofu
2 teaspoons olive oil
3 oz. sliced mushrooms (2 mushrooms)
1 oz. chopped onion (about 1/4" slice)

Recipe Directions for Tofu with Peanut-Ginger Sauce

  1. To prepare sauce: Whisk water, peanut butter, rice vinegar (or white vinegar), soy sauce, honey, ginger and garlic in a small bowl.

  2. Heat oil in a large nonstick skillet over medium heat.

  3. Crumble tofu and cook, stirring occasionally, until the pieces begin to turn golden brown on all sides, about 12 minutes.

  4. Add mushrooms and onion and the peanut sauce and cook, stirring, until the vegetables are just cooked, 1 to 2 minutes more.
