Adaptation of Mom's Shrimp and Pasta with Two Cheeses

Recipe Ingredients for Tofu and Pasta with Tomatoes and Capers

2 quarts water
3 tbsp lemon juice
8 ounces whole wheat pasta
4 garlic cloves
1 tbsp olive oil
1 block firm tofu
6 plum tomatoes, seeded and chopped
2/3 cup capers, drained
1/3 cup chopped fresh basil or Italian parsley
1/2 tsp salt
1/2 tsp fresh ground pepper
1/4 tsp dried crushed red pepper

Recipe Directions for Tofu and Pasta with Tomatoes and Capers

  1. Bring 2 quarts water and lemon juice to a boil in a Dutch oven; add pasta and cook, stirring occasionally, 10 minutes. Drain.

  2. Heat olive oil in saute pan. Saute garlic, tofu, and tomatoes until cooked through.

  3. Toss together pasta mixture, tofu mixture, and next 5 ingredients. Serve with additional pepper and vegan Parmesan cheese, if desired.
