Recipe Ingredients for Tofu and Pasta Soup

2 tbsp olive oil
1 onion, minced
4 cloves garlic, minced
2 carrots, diced
2 stalks celery, diced
12 oz extra-firm tofu
8 c vegetable broth
1 tsp thyme
1 c orzo

Recipe Directions for Tofu and Pasta Soup

  1. Heat the olive oil in a skillet over medium heat and saute the onion until translucent, 3 to 5 minutes. Add the garlic and saute for 1 minute longer. Dice the carrots, celery, and tofu.

  2. Combine the vegetables, tofu, broth, thyme, and salt and pepper to taste in a slow cooker. Cook on low for 6 to 8 minutes.

  3. Cook the pasta is al dente. Add to the soup just before serving.
