Recipe Ingredients for Tofu Pasta Bake

1 lb. whole wheat pasta, e.g. penne
12 oz. firm tofu, drained and pressed
3/4 cup lowfat cottage cheese
1/4 cup water, hot
3 tbsp. Dijon mustard
2 tbsp. Parmesan cheese, grated
1 lb. brocolli
1 red pepper, coursely chopped
1 green pepper, coursely chopped
12 oz. mushrooms, sliced
8 oz. part-skim mozzarella cheese, shredded

Recipe Directions for Tofu Pasta Bake

  1. Combine tofu, cottage cheese, water, mustard, and Parmesan in food processor; process until smooth.

  2. In large pot of boiling water, cook pasta for 5 minutes. Add broccoli and cook for 5 minutes longer, or until pasta and broccoli are barely tender. Drain. Off heat, add peppers, mushrooms, 1 cup shredded mozzarella, and tofu filling. Stir to mix well.

  3. Preheat oven to 350. Coat a 2-quart and a 3-quart casserole dish with no-stick spray. Add pasta mixture. Top with remaining 1 cup mozzarella. Bake for 35-40 minutes.
