Tofu Parmesan w/ whole wheat pasta and marinara sauce

Recipe Ingredients for Tofu Parmesan

3 oz. mozzarella, part skim milk cheese
4 oz. dry whole wheat pasta
2 cups marinara sauce
3 oz. extra firm tofu
1 oz. parmesan cheese

Recipe Directions for Tofu Parmesan

  1. Cook whole wheat penne until al dente and drain.

  2. Cut layer of tofu, squeeze dry, dip in egg and then bread crumbs.

  3. Fry tofu in tbls of olive oil.

  4. Place tbls of olive oil in oven dish.

  5. Put tofu and al dente penne in dish and cover with marinara sauce and bake for approx. 25 min.

  6. Remove from oven and place mozzarella cheese on top; place back in oven until melted.
