Tofu, veggies, and rice noodles plus slices of egg omelete.

Recipe Ingredients for Tofu Pad Thai

230 grams rice noodles
15 ounces firm tofu
4 eggs
100 grams onion
50 grams bell pepper
260 grams zucchini

Recipe Directions for Tofu Pad Thai

  1. Soak noodles in hot water then fry w/seasoning pack.

  2. Fry tofu squares in 2 Tbs vegetable oil.

  3. Fry scrambled egg into a thin omelete then cool and slice into strips.

  4. Fry onion and bell pepper until soft, add zucchini (cut into matchsticks) and fry until soft.

  5. layer noodles then veggies, egg, and tofu. Top w/cilantro.
