Rice noodles in natural peanut sauce with tofu, spinach, sprouts, and red bell pepper

Recipe Ingredients for Tofu Pad Thai

4 tbsp lite coconut milk
1/4 cup natural peanut butter
2 tbsp low-sodium soy sauce
1 1/2 tbsp honey
2 tbsp organic rice vinegar
1 tsp garlic
1 tsp grated fresh ginger
8 cups cooked rice noodles
1 tsp thai chili paste
1 egg
1 tbsp coconut oil
1 cup baby spinach
1 red bell pepper
14 oz bean sprouts
1 cup chopped frozen broccoli

Recipe Directions for Tofu Pad Thai

  1. Cook rice noodles according to instructions

  2. Drain tofu and press for 20 minutes (or longer). Sift flour and cornstarch (and some salt and pepper) over 1 side of sliced tofu. Turn and repeat on other side. Lightly pan fry in some oil. Set aside.

  3. Place coconut milk, peanut butter, soy sauce, honey, rice vinegar, garlic, and ginger in blender. Set aside

  4. Heat coconut oil in large pan over medium-high heat. Add egg and garlic and scramble. Add sprouts, sliced bell pepper, and spinach and stir fry for approx 2 minutes.

  5. Drain rice noodles and add to stir-fry. Add tofu. Stir in peanut sauce and remove from heat. Serve with 1 tsp of crushed, unsalted peanuts on top (optional).
