Recipe Ingredients for Tofu Oatmeal Chocolate Chip Cookies

3 cups whole wheat flour
2 tsp. Baking powder
1/4 tsp. Salt
3 tsp. Cinnamon
4 cups Rolled Oats
3 cups chocolate chips
12 oz. Mori-nu, Tofu, Silken, Firm
1 cup canola oil
1/2 cup Water
2 cups light Brown Sugar
2 tbsp. Vanilla Extract, Imitation, No Alcohol
1/2 cup unsweetened coconut

Recipe Directions for Tofu Oatmeal Chocolate Chip Cookies

  1. Sift together the flour, baking powder, salt and cinnamon. Stir in Oats and chocolate chips.

  2. In a separate bowl, mash tofu with a whisk. Add oil, water, vanilla, brown sugar, and coconut.

  3. Fold wet ingredients into the dry, mixing thoroughly.

  4. Refrigerate dough for at least one hour.

  5. Preheat oven to 375 degrees.

  6. Drop batter by rounded teaspoonful onto ungreased cookie sheet.

  7. Bake 10-12 minutes or until edges start to brown.

  8. Let sit on cookie sheet for a few minutes before transferring to cooling rack.

  9. Note: These cookies are best if stored in and eaten straight from refrigerator.
